- 1/4 teaspoon black pepper

Instructions
- Prepare Eggplant: Salt eggplant slices to draw out moisture for 20–30 minutes, then pat dry.
- Breading: Set up three bowls with flour, eggs, and breadcrumb mixture.
- Coat Eggplant: Dredge slices in flour, egg, then breadcrumb mixture.
- Fry: Fry slices in oil until golden brown and crisp.
- Serve: Drain on paper towels and serve hot.
