Description

Classic homemade fried doughnuts coated in granulated sugar, featuring a soft, fluffy yeast dough and a crispy golden exterior. Perfect for a delightful dessert or breakfast treat that can be made fresh in just a couple of hours.

Ingredients

Scale

Dough

  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 3/4 cup warm milk (about 110°F)
  • 1/4 cup granulated sugar
  • 2 1/2 cups all-purpose flour (plus more for rolling)
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter (softened)
  • 1 large egg

For Frying

  • Vegetable oil (for frying)

For Coating

  • 1 cup granulated sugar

Instructions

  1. Activate yeast: In a small bowl, combine warm milk and yeast. Let sit for 5–10 minutes until foamy to ensure the yeast is active and ready for dough preparation.
  2. Mix dough ingredients: In a large mixing bowl, whisk together flour, sugar, and salt. Add the softened butter, egg, and yeast mixture. Mix until a sticky dough forms, bringing all ingredients together.
  3. Knead dough: Turn the dough out onto a floured surface and knead for 5–7 minutes until smooth and elastic, which helps develop gluten for a light texture.
  4. First rise: Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 to 1.5 hours or until doubled in size.
  5. Shape doughnuts: Punch down the risen dough and roll it out to about 1/2-inch thickness. Use a doughnut cutter or two round cutters (about 3-inch and 1-inch sizes) to cut out doughnut shapes. Re-roll scraps and cut additional doughnuts as needed.
  6. Second rest: Place the cut doughnuts on a floured surface or parchment-lined tray, cover lightly, and let them rest for 30 minutes until slightly puffed.
  7. Heat oil: Heat 2–3 inches of vegetable oil in a deep pot to 350°F (175°C), ensuring it is hot enough for frying to achieve a crispy texture.
  8. Fry doughnuts: Fry doughnuts in batches for 1–2 minutes per side until golden brown and puffed. Use a slotted spoon to remove them and drain on paper towels to remove excess oil.
  9. Coat doughnuts: While still warm, roll each doughnut in granulated sugar to coat evenly, adding a sweet finish.
  10. Serve fresh: Enjoy your homemade fried doughnuts immediately for the best flavor and texture.

Notes

  • For extra flavor, mix a little cinnamon into the sugar coating before rolling the doughnuts.
  • These doughnuts are best enjoyed the same day they’re made as they lose freshness quickly.
  • You can also fry the doughnut holes for bite-sized treats, using the dough scraps.
