For the French Toast Waffles:
- 4 slices thick-cut bread (brioche or Texas toast)
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon

- butter or nonstick spray (for greasing the waffle iron)
For the Peach Sauce:
- 2 large peaches (peeled and diced)
- 2 tablespoons brown sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
Instructions
- Preheat your waffle iron and lightly grease it with butter or nonstick spray. In a shallow bowl, whisk together eggs, milk, vanilla extract, cinnamon, and salt. Dip each slice of bread into the egg mixture, coating both sides well without soaking too long.
- Place a dipped slice of bread onto the waffle iron and cook according to your waffle maker’s instructions, usually about 3–5 minutes, until golden and crisp. Repeat with remaining slices.
- To make the peach sauce, combine diced peaches, brown sugar, lemon juice, and cinnamon in a small saucepan over medium heat. Cook, stirring occasionally, for 5–7 minutes, until the peaches are soft and syrupy. If a thicker sauce is desired, stir in the cornstarch slurry and cook for 1–2 more minutes until thickened. Remove from heat.
- Serve the French toast waffles warm, topped with the peach sauce and an optional dusting of powdered sugar or dollop of whipped cream.

- Fresh or frozen peaches work well for the sauce.
- For added flavor, stir in a splash of vanilla or a pinch of nutmeg.
