For the French Toast Waffles:

For the Peach Sauce:

  • 2 large peaches (peeled and diced)
  • 2 tablespoons brown sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Instructions

  1. Preheat your waffle iron and lightly grease it with butter or nonstick spray. In a shallow bowl, whisk together eggs, milk, vanilla extract, cinnamon, and salt. Dip each slice of bread into the egg mixture, coating both sides well without soaking too long.
  2. Place a dipped slice of bread onto the waffle iron and cook according to your waffle maker’s instructions, usually about 3–5 minutes, until golden and crisp. Repeat with remaining slices.
  3. To make the peach sauce, combine diced peaches, brown sugar, lemon juice, and cinnamon in a small saucepan over medium heat. Cook, stirring occasionally, for 5–7 minutes, until the peaches are soft and syrupy. If a thicker sauce is desired, stir in the cornstarch slurry and cook for 1–2 more minutes until thickened. Remove from heat.
  4. Serve the French toast waffles warm, topped with the peach sauce and an optional dusting of powdered sugar or dollop of whipped cream.
