Description

These French Toast Muffins are a delightful twist on classic French toast, baked in individual portions for ease and convenience. Perfect for a special brunch or a make-ahead breakfast option, these muffins are a delicious blend of custardy bread with warm spices, topped with a dusting of powdered sugar or a drizzle of maple syrup.

Ingredients

Scale

Dry Ingredients:

  • 6 cups cubed day-old bread (such as brioche or French bread)

Wet Ingredients:

  • 4 large eggs
  • 1 cup milk
  • ¼ cup heavy cream
  • ¼ cup maple syrup
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • pinch of salt

Additional:

  • powdered sugar or maple syrup (for serving)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F and prepare a 12-cup muffin tin by greasing it lightly or lining it with paper liners.
  2. Mix the Ingredients: In a large bowl, whisk together the eggs, milk, cream, maple syrup, brown sugar, vanilla, cinnamon, nutmeg, and salt until well combined. Add the cubed bread to the mixture and gently stir to coat all pieces. Allow the bread to soak for 5–10 minutes.
  3. Fill the Muffin Tin: Evenly divide the soaked bread mixture into the prepared muffin tin, pressing down lightly to compact. Bake for 25 to 30 minutes until golden brown and set in the center.
  4. Serve: Let the muffins cool slightly before removing from the pan. Dust with powdered sugar or drizzle with maple syrup before serving.

Notes

  • Best with slightly stale bread for better texture.
  • Try adding chopped nuts, mini chocolate chips, or fresh berries for variety.
  • Muffins can be made ahead and reheated for convenience.
