For the bread:
- 3 ripe bananas (mashed)
- 2 large eggs
- ½ cup creamy peanut butter or almond butter
- ¼ cup honey or maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup rolled oats (optional for texture)
- ½ cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan with parchment paper or a light greasing.
- Mix wet ingredients: In a large bowl, combine mashed bananas, eggs, nut butter, honey or maple syrup, and vanilla extract until smooth.
- Add dry ingredients: Stir in cinnamon, baking soda, and salt. Optionally fold in oats and choice of nuts or chocolate chips.
- Bake: Pour the batter into the loaf pan, smooth the top, and bake for 35–45 minutes until a toothpick comes out clean.
- Cool and serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- For a nut-free version, substitute with sunflower seed butter.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
