  • 1 pound large shrimp, peeled and deveined

Sauce

  • 2 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg (optional)
  • Salt and black pepper to taste

Garnish

  • 2 tablespoons chopped fresh parsley
  • Extra Parmesan for serving


Instructions

  1. Cook Fettuccine: Cook fettuccine according to package directions until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
  2. Cook Shrimp: In a large skillet, heat 1 tablespoon butter and olive oil over medium-high heat. Add shrimp in a single layer, season lightly with salt and pepper, and cook for 2–3 minutes per side, until pink and opaque. Remove shrimp and set aside.
  3. Prepare Alfredo Sauce: Reduce heat to medium. Add remaining butter and garlic to the skillet. Cook for 1 minute until fragrant. Stir in heavy cream and milk, bringing to a gentle simmer. Add Parmesan cheese and nutmeg, stirring until melted and smooth. Season with salt and pepper.
  4. Combine Pasta and Sauce: Add the cooked fettuccine to the sauce and toss until coated, adding reserved pasta water as needed to loosen the sauce. Stir in shrimp and cook for 1–2 minutes to heat through.
  5. Serve: Serve immediately, garnished with fresh parsley and extra Parmesan.

Notes

  • For extra flavor, sauté the shrimp with a pinch of red pepper flakes.
  • You can substitute half-and-half for the cream and milk combination.
  • Best served fresh, as Alfredo sauce thickens when cooled.
