For the cookies:

For the icing:
- 1 cup powdered sugar
- 2 tablespoons pure maple syrup
- 1–2 tablespoons milk (or as needed for consistency)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg, vanilla extract, and espresso powder until smooth.
- Combine dry ingredients: In a separate bowl, whisk together the flour, cinnamon, ginger, cardamom, cloves, nutmeg, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Shape and bake: Scoop tablespoon-sized portions of dough, roll into balls, and place on the prepared baking sheet. Flatten each cookie slightly and bake for 10–12 minutes until set. Cool on a wire rack.
- Make icing: Whisk together powdered sugar, maple syrup, milk, cinnamon, and vanilla until smooth. Drizzle or spread over cooled cookies. Let set before serving.
Notes
- For a stronger coffee flavor, increase espresso powder to 1 1/2 tablespoons.
