Ingredients
Ground Beef or Ground Turkey:
1 lb;
Onion, diced:
1 small;
Taco Seasoning:
1 packet;
Black Beans, drained and rinsed:
1 (15 oz) can;
Kidney Beans, drained and rinsed:
1 (15 oz) can;
Corn, undrained:
1 (15 oz) can;
Diced Tomatoes with Green Chilies (such as Rotel):
1 (15 oz) can;
Tomato Sauce:
1 (8 oz) can;
Beef or Chicken Broth:
1 cup;
Salt and Pepper:
to taste;
Optional Toppings:
shredded cheese, sour cream, chopped cilantro, sliced jalapeños, tortilla chips
Instructions
- Cook Ground Beef and Onion: In a large pot or Dutch oven over medium heat, cook the ground beef and diced onion until the meat is browned and the onion is soft, about 6 to 8 minutes. Drain excess grease if necessary.
- Add Seasonings and Ingredients: Stir in the taco seasoning and cook for 1 minute. Add the black beans, kidney beans, corn (with liquid), diced tomatoes, tomato sauce, and broth. Stir well to combine.
- Simmer and Serve: Bring the soup to a simmer and cook for 20 to 25 minutes, stirring occasionally. Taste and adjust seasoning with salt and pepper as needed. Serve hot with your favorite taco toppings.
Notes
- This soup is very forgiving—feel free to use pinto beans, add bell peppers, or swap in ground chicken.
