Instructions
- Heat olive oil and sauté aromatics: Heat the olive oil in a large skillet over medium heat. Add the finely chopped red onion and minced garlic. Sauté for 1 to 2 minutes until they become fragrant and translucent.
- Add bell pepper and zucchini: Stir in the diced red bell pepper and zucchini. Cook for 4 to 5 minutes, stirring occasionally, until the vegetables begin to soften but remain slightly crisp.
- Add corn and seasonings: Add the corn kernels along with salt and black pepper. Continue cooking for another 3 to 4 minutes, stirring occasionally, until all the vegetables are cooked through yet still have some crunch.
- Finish with lime juice and herbs: Remove the skillet from the heat and stir in the fresh lime juice and chopped basil or cilantro. Mix well to combine all flavors.
- Serve: Serve the corn medley warm, at room temperature, or chilled as a fresh summer salad. Optionally garnish or mix with additional toppings as desired.
