Main Ingredients:
- 1 tablespoon olive oil
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (4 oz) diced green chilies
- 2 cups cooked shredded chicken
- 1 can (15 oz) white beans (drained and rinsed)
Optional Additions:
- 1 cup frozen corn
For Garnish:
- 1/2 cup sour cream
- 1/2 cup shredded Monterey Jack or pepper jack cheese
- juice of 1 lime
- chopped cilantro and tortilla strips
Instructions
- Heat olive oil: In a large pot, heat olive oil over medium heat.
- Sauté onion and garlic: Add diced onion, cook until softened, then add garlic, cumin, oregano, salt, and pepper.
- Add remaining ingredients: Stir in green chilies, chicken, white beans, corn, and chicken broth. Simmer for 10–15 minutes.
- Finish the soup: Reduce heat, stir in sour cream, cheese, and lime juice until creamy. Adjust seasoning.
- Serve: Garnish with cilantro and tortilla strips. Serve hot.

- This soup is a great way to use up leftover rotisserie chicken.
- To add more heat, consider using jalapeños or spicier green chilies.
