  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (4 oz) diced green chilies
  • 2 cups cooked shredded chicken
  • 1 can (15 oz) white beans (drained and rinsed)

Optional Additions:

  • 1 cup frozen corn

For Garnish:

  • 1/2 cup sour cream
  • 1/2 cup shredded Monterey Jack or pepper jack cheese
  • juice of 1 lime
  • chopped cilantro and tortilla strips

Instructions

  1. Heat olive oil: In a large pot, heat olive oil over medium heat.
  2. Sauté onion and garlic: Add diced onion, cook until softened, then add garlic, cumin, oregano, salt, and pepper.
  3. Add remaining ingredients: Stir in green chilies, chicken, white beans, corn, and chicken broth. Simmer for 10–15 minutes.
  4. Finish the soup: Reduce heat, stir in sour cream, cheese, and lime juice until creamy. Adjust seasoning.
  5. Serve: Garnish with cilantro and tortilla strips. Serve hot.
