Dry Ingredients:

- 3 large eggs
- 1 1/2 cups milk
- 2 tablespoons melted butter (plus more for greasing)
- 1 teaspoon vanilla extract

Instructions
- Dry Ingredients: In a mixing bowl, whisk together the flour, cocoa powder, sugar, and salt.
- Let the batter rest for 15–30 minutes.
- Heat a nonstick skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of batter into the pan, swirling quickly to coat the bottom in a thin layer.
- Cook for 1–2 minutes until the edges lift, then flip and cook for another 30–60 seconds.
- Repeat with remaining batter.
- Fill warm crepes with your choice of fillings, fold or roll, and serve immediately.
Wet Ingredients: In another bowl, beat the eggs, then add milk, melted butter, and vanilla extract. Gradually whisk the wet ingredients into the dry until the batter is smooth and lump-free.
Notes
- Crepes can be made ahead and stored in the fridge for up to 3 days or frozen with parchment between layers.
