  • 1 1/2 cups milk
  • 2 tablespoons melted butter (plus more for greasing)
  • 1 teaspoon vanilla extract

Instructions

  1. Dry Ingredients: In a mixing bowl, whisk together the flour, cocoa powder, sugar, and salt.
  2. Wet Ingredients: In another bowl, beat the eggs, then add milk, melted butter, and vanilla extract. Gradually whisk the wet ingredients into the dry until the batter is smooth and lump-free.

  3. Let the batter rest for 15–30 minutes.
  4. Heat a nonstick skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of batter into the pan, swirling quickly to coat the bottom in a thin layer.
  5. Cook for 1–2 minutes until the edges lift, then flip and cook for another 30–60 seconds.
  6. Repeat with remaining batter.
  7. Fill warm crepes with your choice of fillings, fold or roll, and serve immediately.
