Pasta:
- 12 oz elbow macaroni or small pasta of choice
Salad:
- 1 cup chopped dill pickles
- 1/2 cup shredded cheddar cheese
- 1/3 cup finely chopped red onion
- 1/4 cup chopped fresh dill
Dressing:
- 3/4 cup mayonnaise
- 1/4 cup pickle juice
- 1 tablespoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Cook the Pasta: Cook the pasta according to package directions until al dente. Drain and rinse under cold water.
- Prepare the Dressing: In a large bowl, whisk together mayonnaise, pickle juice, Dijon mustard, garlic powder, salt, and pepper.
- Combine Ingredients: Add the cooled pasta, chopped pickles, cheese, red onion, and dill to the dressing. Mix well.
- Chill and Serve: Cover and refrigerate for at least 1 hour. Stir before serving and garnish with extra dill if desired.

- Use baby dill pickles for extra crunch.
