Biscuit Dough:
- 1 can refrigerated biscuit dough (8 count)
Pizza Cupcakes:
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup mini pepperoni or chopped cooked sausage
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon garlic powder
- Chopped parsley or basil for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a standard 12-cup muffin tin.
- Prepare dough: Separate biscuit dough and flatten each biscuit into a 4-inch circle. Press one dough round into each muffin cup, gently pressing it up the sides to form a cup.
- Add toppings: Spoon 1 tablespoon of pizza sauce into each cup, then top with shredded mozzarella, a few mini pepperoni or sausage pieces, a sprinkle of Parmesan, and a pinch of Italian seasoning and garlic powder.
- Bake: Bake for 15–18 minutes, or until the dough is golden and the cheese is bubbly.
- Serve: Let cool for 5 minutes in the pan before removing. Garnish with parsley or basil if desired and serve warm.

- Customize with your favorite toppings like bell peppers, mushrooms, or olives.
- For a crispier crust, sprinkle a little cornmeal in the muffin cups before adding the dough.
