Cake:

- 1 cup chopped pecans, toasted
Topping:
- 1 cup sweetened shredded coconut
- 1/2 cup chopped pecans
- 1/2 cup evaporated milk
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter
- 2 large egg yolks
- 1 teaspoon vanilla extract
Instructions
- Preheat Oven: Preheat oven to 350°F. Grease and flour a 10-inch bundt pan.
- Mix Cake Batter: In a large mixing bowl, combine cake mix, pudding mix, eggs, sour cream, vegetable oil, milk, and vanilla. Beat until smooth. Fold in toasted pecans.
- Bake Cake: Pour batter into pan and bake for 50–55 minutes. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare Topping: In a saucepan, combine coconut, pecans, evaporated milk, sugar, butter, and egg yolks. Cook until thickened and caramelized. Stir in vanilla. Spread over cooled cake.
