Cake:

  • 2 large eggs
  • 1 cup buttermilk (room temperature)

  • 1 cup hot coffee or hot water

Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 2 teaspoons vanilla extract
  • pinch of salt

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. Mix Dry Ingredients: Whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt in a bowl.
  3. Mix Wet Ingredients: In a separate bowl, whisk eggs, buttermilk, oil, vinegar, and vanilla until smooth.
  4. Combine: Pour wet ingredients into dry ingredients, mix until just combined. Slowly add hot coffee/water, stir until smooth.
  5. Bake: Divide batter into pans, bake for 30–35 minutes. Cool cakes on wire racks.
  6. Make Frosting: Beat cream cheese and butter, add powdered sugar gradually, mix in vanilla and salt until fluffy.
  7. Frost Cake: Frost one layer, place second layer on top, frost top and sides. Chill before slicing.
