    For the Chicken:

  • 4 boneless skinless chicken breasts
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • For the Sauce:

  • 1 (10.5 oz) can cream of chicken soup
  • ¾ cup sour cream
  • For the Stuffing:

  • 1 (6 oz) box stuffing mix (like Stove Top)
  • 1 cup low-sodium chicken broth
  • Optional:

  • 1 ½ cups frozen mixed vegetables

Instructions

  1. Prepare the Slow Cooker: Spray the inside of a 6-quart slow cooker with nonstick spray.
  2. Season the Chicken: Place the chicken breasts in the bottom of the slow cooker and season with garlic powder, onion powder, salt, and pepper.
  3. Make the Sauce: In a medium bowl, whisk together the cream of chicken soup and sour cream until smooth. Spread the mixture evenly over the chicken.
  4. Add the Stuffing: Sprinkle the dry stuffing mix evenly over the top. Pour the chicken broth over the stuffing without stirring.
  5. Cook: Cover and cook on low for 5–6 hours or on high for 3–4 hours, until the chicken is tender. Add vegetables during the last hour if desired.
  6. Finish and Serve: Before serving, gently mix the stuffing layer into the creamy sauce beneath. Shred or slice the chicken as desired and serve warm with garnish.

Notes

  • For a richer flavor, use cream of mushroom soup or a blend of both soups.
  • This recipe can also be made with thighs for a juicier result.
