Ground Beef Mixture:

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Casserole:

  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • Salt and pepper to taste
  • 3 cups frozen tater tots

Garnish:

  • Chopped parsley or green onions for garnish (optional)

Instructions

  1. Prepare Ground Beef Mixture: In a skillet over medium heat, cook ground beef with chopped onion until browned and fully cooked, about 6–8 minutes. Add garlic and cook for another 30 seconds. Drain any excess fat.
  2. Combine Ingredients: Transfer the beef mixture to the Crock-Pot. Stir in kidney beans, corn, diced tomatoes with green chilies, cream of mushroom soup, shredded cheese, paprika, chili powder, salt, and pepper. Mix until well combined.
  3. Add Tater Tots: Top the mixture with an even layer of frozen tater tots. Cover and cook on low for 5–6 hours or on high for 2½–3 hours, until the casserole is hot and bubbly and the tater tots are cooked through.
  4. Garnish and Serve: Garnish with chopped parsley or green onions if desired. Serve warm.

Notes

  • For a crispier topping, transfer the insert to the oven and broil for a few minutes before serving.
  • You can also use black beans or pinto beans instead of kidney beans.
