For the Reuben balls:

  • 1 1/2 cups chopped cooked corned beef
  • 1 cup sauerkraut (drained and squeezed dry)
  • 1 cup shredded Swiss cheese
  • 4 oz cream cheese (softened)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon caraway seeds (optional)
  • 1 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1 1/2 cups seasoned breadcrumbs
  • vegetable oil for frying

For the spicy dip:

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon prepared horseradish
  • 1 teaspoon hot sauce
  • 1/2 teaspoon smoked paprika
  • salt and pepper to taste

Instructions

  1. In a large bowl, mix the corned beef, sauerkraut, Swiss cheese, cream cheese, garlic powder, pepper, and caraway seeds until well combined.
  2. Form the mixture into 1-inch balls and place on a parchment-lined baking sheet. Freeze for 20–30 minutes to firm up.
  3. Set up a dredging station with three bowls: flour in one, beaten eggs in the second, and breadcrumbs in the third. Roll each chilled ball in flour, dip in egg, then coat in breadcrumbs.
  4. Heat oil in a deep skillet or saucepan to 350°F (175°C). Fry the Reuben balls in batches for 2–3 minutes or until golden and crispy. Drain on paper towels.
  5. To make the dip, whisk together the mayonnaise, ketchup, horseradish, hot sauce, smoked paprika, salt, and pepper until smooth.
  6. Serve the crispy Reuben balls hot with the spicy dip on the side.
