Description

  • 2 large eggs
  • 1/3 cup milk

Additional Ingredients:

  • 2 cups corn kernels (fresh, canned, or frozen and thawed)
  • 1/4 cup chopped green onions
  • 1/4 cup finely diced red bell pepper (optional)
  • 1/2 cup shredded cheddar cheese (optional)
  • Vegetable oil for frying


Instructions

  1. Prepare the Batter: In a large bowl, whisk together the flour, baking powder, salt, pepper, and smoked paprika. In a separate bowl, beat the eggs and milk together. Add the wet ingredients to the dry ingredients and stir until just combined.
  2. Combine Ingredients: Fold in the corn, green onions, red bell pepper (if using), and cheddar cheese (if using). The batter should be thick but scoopable.
  3. Fry the Fritters: Heat 2–3 tablespoons of vegetable oil in a large skillet over medium heat. Drop spoonfuls of batter into the hot oil, flattening slightly with the back of the spoon. Cook for 2–3 minutes per side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil. Repeat with remaining batter, adding more oil as needed.
  4. Serve: Serve warm with sour cream, spicy mayo, or a drizzle of honey.
