For the Soup:
- 1 tablespoon olive oil
- 1 pound Italian sausage (casings removed)
- 1 small yellow onion (diced)
- 2 cloves garlic (minced)
- 2 medium carrots (peeled and diced)
- 2 celery stalks (diced)
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes (optional)
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups chopped kale or spinach
- 1 (15 oz) can cannellini beans (drained and rinsed)
- Salt and black pepper to taste
Instructions
- Prepare the Soup Base: Heat olive oil in a large pot, cook Italian sausage until browned. Add onion, garlic, carrots, and celery, sauté until vegetables soften.
- Add Flavor: Stir in Italian seasoning and red pepper flakes. Pour in chicken broth, simmer until vegetables are tender.
- Finish the Soup: Stir in heavy cream, Parmesan cheese, simmer until slightly thickened. Add kale/spinach, beans, cook until greens wilt. Season with salt and pepper.

Notes
- For a lower-fat version, use half-and-half instead of heavy cream and turkey sausage instead of pork.
- You can also use Swiss chard or escarole in place of kale.
