For the Pasta:
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts (cut into bite-sized pieces)
- Salt and pepper to taste
- 3 cloves garlic (minced)
- 2 cups heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes (optional)
- 12 oz pasta (penne, fettuccine, or your choice)
- 1/2 cup reserved pasta water
- Chopped parsley for garnish (optional)
Instructions
- Cook the Pasta: Cook pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.
- Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then add to the skillet. Cook for 5–7 minutes until golden and cooked through. Remove chicken and set aside.
- Make the Sauce: In the same skillet, add garlic and sauté for 1 minute until fragrant. Reduce heat to medium-low and pour in heavy cream. Stir in Parmesan cheese, Italian seasoning, and red pepper flakes if using. Let simmer for 3–5 minutes until slightly thickened.
- Combine and Serve: Add the cooked pasta and chicken back into the skillet and toss to coat. If the sauce is too thick, add a splash of reserved pasta water to loosen it. Serve warm, garnished with chopped parsley if desired.
Notes
- For extra flavor, stir in sun-dried tomatoes or spinach before serving.
- You can also use rotisserie chicken for a shortcut.
