For the Pasta:

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts (cut into bite-sized pieces)
  • Salt and pepper to taste
  • 3 cloves garlic (minced)
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 12 oz pasta (penne, fettuccine, or your choice)
  • 1/2 cup reserved pasta water
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Cook pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.
  2. Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, then add to the skillet. Cook for 5–7 minutes until golden and cooked through. Remove chicken and set aside.
  3. Make the Sauce: In the same skillet, add garlic and sauté for 1 minute until fragrant. Reduce heat to medium-low and pour in heavy cream. Stir in Parmesan cheese, Italian seasoning, and red pepper flakes if using. Let simmer for 3–5 minutes until slightly thickened.
  4. Combine and Serve: Add the cooked pasta and chicken back into the skillet and toss to coat. If the sauce is too thick, add a splash of reserved pasta water to loosen it. Serve warm, garnished with chopped parsley if desired.

Notes

  • For extra flavor, stir in sun-dried tomatoes or spinach before serving.
  • You can also use rotisserie chicken for a shortcut.
