- 12 ounces fettuccine or linguine
Curry Sauce:
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 1/2 teaspoons curry powder
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup dry white wine or seafood stock
- 1 cup coconut milk
- 1/2 cup heavy cream
- juice of 1/2 lemon
- 1 teaspoon lemon zest
Additional:
- 1 pound cooked lobster meat, chopped into bite-sized pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped
- extra lemon wedges for serving
Instructions
- Cook Pasta: Boil salted water and cook pasta until al dente. Reserve 1/2 cup pasta water.
- Prepare Curry Sauce: Sauté onion, garlic, and ginger. Add spices, then wine/stock. Stir in coconut milk, cream, lemon, salt, and pepper. Add lobster and cook.
- Combine: Toss pasta in skillet with sauce, adding pasta water as needed. Garnish with cilantro and serve with lemon wedges.
Notes
- For a dairy-free version, replace heavy cream with additional coconut milk.
- You can also swap lobster for shrimp or crab.
