Curry Sauce:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 1/2 teaspoons curry powder
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup dry white wine or seafood stock
  • 1 cup coconut milk
  • 1/2 cup heavy cream
  • juice of 1/2 lemon
  • 1 teaspoon lemon zest

Additional:

  • 1 pound cooked lobster meat, chopped into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • extra lemon wedges for serving

Instructions

  1. Cook Pasta: Boil salted water and cook pasta until al dente. Reserve 1/2 cup pasta water.
  2. Prepare Curry Sauce: Sauté onion, garlic, and ginger. Add spices, then wine/stock. Stir in coconut milk, cream, lemon, salt, and pepper. Add lobster and cook.
  3. Combine: Toss pasta in skillet with sauce, adding pasta water as needed. Garnish with cilantro and serve with lemon wedges.

Notes

  • For a dairy-free version, replace heavy cream with additional coconut milk.
  • You can also swap lobster for shrimp or crab.
