Pasta:
- 8 ounces fettuccine or linguine pasta
Shrimp:
- 1 pound large shrimp (peeled and deveined)
Sauce:
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 tablespoon unsalted butter
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the Pasta: Cook the pasta according to package directions until al dente. Drain and set aside, reserving ½ cup of the pasta water.
- Cook the Shrimp: Heat olive oil in a large skillet over medium heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque. Remove shrimp and set aside.
- Make the Sauce: In the same skillet, melt butter and sauté garlic. Add heavy cream, Parmesan, Italian seasoning, red pepper flakes, salt, and pepper. Simmer until slightly thickened.
- Combine and Serve: Add pasta and shrimp back to the skillet, toss to coat. Add reserved pasta water if needed. Garnish with parsley and serve.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- This recipe works well with scallops or chicken too.
