Pasta:

  • 8 ounces fettuccine or linguine pasta

Shrimp:

  • 1 pound large shrimp (peeled and deveined)

Sauce:

  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 tablespoon unsalted butter
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the Pasta: Cook the pasta according to package directions until al dente. Drain and set aside, reserving ½ cup of the pasta water.
  2. Cook the Shrimp: Heat olive oil in a large skillet over medium heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque. Remove shrimp and set aside.
  3. Make the Sauce: In the same skillet, melt butter and sauté garlic. Add heavy cream, Parmesan, Italian seasoning, red pepper flakes, salt, and pepper. Simmer until slightly thickened.
  4. Combine and Serve: Add pasta and shrimp back to the skillet, toss to coat. Add reserved pasta water if needed. Garnish with parsley and serve.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • This recipe works well with scallops or chicken too.
