  • 6 cups chicken broth
  • 1 cup long-grain white rice
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt

Cream Mixture:

  • 1 cup milk or half-and-half
  • 1/2 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1/2 cup grated Parmesan cheese (optional)

Garnish:

  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery until softened.
  2. Add garlic and cook for 1 minute.
  3. Combine chicken, broth, rice, herbs, salt, and pepper. Simmer until rice is tender and chicken is cooked.
  4. Shred chicken and return to pot.
  5. Whisk flour with milk until smooth. Stir into soup with cream. Simmer until thickened.
  6. Optional: Stir in Parmesan, remove bay leaf, garnish with parsley, and serve.

  • For a shortcut, use rotisserie chicken and add it after rice is cooked.
