- 5 cups low-sodium chicken broth
- 1 (15-ounce) can crushed tomatoes
- 8 lasagna noodles, broken into pieces

- 1 1/2 cups shredded mozzarella cheese

Instructions
- Heat the olive oil and brown the sausage: In a large pot over medium heat, add olive oil and Italian sausage. Cook until browned, breaking it up with a spoon.

- Add broth, tomatoes, and noodles: Pour in chicken broth and crushed tomatoes, then add lasagna noodles. Bring to a boil, then simmer until noodles are tender.
- Finish the soup: Stir in heavy cream, Parmesan, and mozzarella until melted and creamy. Season with salt and pepper.
