  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 can (15 oz) corn (drained)
  • 1 can (15 oz) pinto beans (drained and rinsed)
  • 1 can (15 oz) kidney beans (drained and rinsed)
  • 1 can (10 oz) diced tomatoes with green chiles (like Rotel)
  • 2 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. Cook the Beef: In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess grease.
  2. Add Aromatics: Add the diced onion and garlic, sauté for 3–4 minutes until the onion is soft.
  3. Combine Ingredients: Stir in the diced tomatoes, corn, pinto beans, kidney beans, and tomatoes with green chiles. Pour in the beef broth and add chili powder, cumin, paprika, salt, and pepper.
  4. Simmer: Bring the soup to a boil, then reduce heat and let it simmer uncovered for 20–25 minutes to blend flavors.
  5. Adjust Seasoning and Serve: Taste and adjust seasoning if needed. Serve hot with optional toppings.
