- 1 pound ground beef
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 can (15 oz) diced tomatoes (with juices)
- 1 can (15 oz) corn (drained)
- 1 can (15 oz) pinto beans (drained and rinsed)
- 1 can (15 oz) kidney beans (drained and rinsed)
- 1 can (10 oz) diced tomatoes with green chiles (like Rotel)
- 2 cups beef broth
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- Cook the Beef: In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess grease.
- Add Aromatics: Add the diced onion and garlic, sauté for 3–4 minutes until the onion is soft.
- Combine Ingredients: Stir in the diced tomatoes, corn, pinto beans, kidney beans, and tomatoes with green chiles. Pour in the beef broth and add chili powder, cumin, paprika, salt, and pepper.
- Simmer: Bring the soup to a boil, then reduce heat and let it simmer uncovered for 20–25 minutes to blend flavors.
- Adjust Seasoning and Serve: Taste and adjust seasoning if needed. Serve hot with optional toppings.

- You can add diced potatoes or green beans for extra heartiness.
