- 1/2 pound ground sausage (optional)
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies, undrained
- 1 cup shredded cheddar cheese
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 1 (8.5 oz) box cornbread mix (such as Jiffy)
- 1 egg
- 1/3 cup milk

Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Cook the meat: In a large skillet over medium heat, cook the ground beef (and sausage if using) until browned. Add onion, bell pepper, and garlic. Sauté until softened.
- Prepare the filling: Stir in black beans, corn, diced tomatoes with chilies, chili powder, cumin, salt, and pepper. Simmer for 5 minutes. Remove from heat and stir in half the cheddar cheese.
- Assemble: Pour the mixture into a greased 9×13-inch baking dish.
- Make the cornbread: In a medium bowl, prepare the cornbread mix with egg and milk. Spread the batter over the filling.
- Bake: Sprinkle remaining cheddar cheese on top. Bake for 25–30 minutes until golden and cooked through. Let rest before serving.
Notes
- For added heat, mix diced jalapeños into the filling or top with hot sauce.
- This casserole can be made ahead and reheated for even better flavor the next day.
- Serve with sour cream, chopped green onions, or avocado for extra toppings.
