Streusel Topping:

  • 1/3 cup old-fashioned oats
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons cold butter, cubed

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. Mix dry ingredients: In a large bowl, combine oats, brown sugar, baking powder, salt, cinnamon, and nutmeg.
  3. Combine wet ingredients: In a separate bowl, whisk together milk, eggs, melted butter, vanilla, and Greek yogurt or applesauce.
  4. Mix wet and dry: Add wet ingredients to the dry mixture and combine well. Pour into the prepared baking dish.
  5. Prepare streusel topping: Mix oats, flour, brown sugar, and cinnamon. Cut in cold butter until crumbly. Sprinkle over oatmeal mixture.
