Instructions
- Preheat the oven and prepare pans: Preheat oven to 350°F. Grease and flour three 8-inch round cake pans.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
- Beat butter, oil, and sugar: In a large bowl, beat butter, oil, and sugar until light and fluffy.
- Add eggs and extracts: Add eggs one at a time, then mix in vanilla and coconut extracts.
- Combine wet and dry ingredients: Alternate adding dry ingredients and coconut milk to wet ingredients, starting and ending with dry. Fold in shredded coconut.
- Bake: Divide batter among pans and bake for 22-25 minutes. Cool cakes in pans, then transfer to racks to cool.
- Make frosting: Beat cream cheese and butter until creamy. Gradually add powdered sugar, coconut extract, and coconut milk until smooth.
