Instructions
- Prepare Baking Sheet: Line a baking sheet with parchment paper or lightly grease it and set aside.
- Cook Sugar Mixture: In a heavy-bottomed saucepan over medium heat, combine sugar, corn syrup, and water. Stir until the sugar dissolves, then bring the mixture to a boil without stirring further. Attach a candy thermometer and continue cooking until the temperature reaches 300°F (hard crack stage), about 10 to 12 minutes.
- Add Peanuts: Quickly stir in the peanuts and continue cooking for 1 to 2 more minutes.
- Final Steps: Remove from heat and immediately stir in the butter, vanilla extract, baking soda, and salt. The mixture will foam—stir quickly and carefully. Immediately pour the hot brittle mixture onto the prepared baking sheet and spread it out as thinly as possible using a spatula. Let cool completely, then break into pieces.
