- ½ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 stalk celery (finely chopped)

- salt and black pepper to taste
Optional:
- 2 tablespoons chopped fresh parsley

Instructions
- In a large bowl, combine the chicken, mayonnaise, Dijon mustard, celery, red onion, lemon juice, garlic powder, salt, and pepper.
- Chill for at least 30 minutes before serving to let the flavors meld.
- Serve scooped over lettuce leaves, in croissants, on sandwich bread, or with crackers.
