- 2 cups semi-sweet chocolate chips
- 2 tablespoons shortening or coconut oil (optional, for smoother coating)
Instructions
- Prepare Peanut Butter Mixture: In a large bowl, mix together the peanut butter, softened butter, vanilla, and salt until smooth and creamy. Gradually add powdered sugar, 1 cup at a time, until the mixture forms a thick dough.
- Form Balls: Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet. Chill in the refrigerator for at least 30 minutes.
- Coat with Chocolate: Melt chocolate chips with shortening. Dip each peanut butter ball into the melted chocolate, leaving the top exposed. Let excess chocolate drip off.
- Chill and Serve: Refrigerate until the chocolate sets, about 15–20 minutes. Store in an airtight container in the fridge.
