- 1/2 cup unsalted butter
- 1 cup creamy peanut butter
- 1 bag (11–12 oz) butterscotch chips
- 1 bag (10 oz) mini colored marshmallows
- 1 teaspoon vanilla extract
Instructions
- Prepare the Pan: Line a 9×9-inch baking dish with parchment paper, leaving some overhang for easy removal.
- Melt Ingredients: In a large saucepan over low heat, melt butter, peanut butter, and butterscotch chips together, stirring constantly until smooth. Remove from heat and stir in vanilla extract.
- Cool the Mixture: Allow the mixture to cool for about 10–15 minutes, stirring occasionally, until just warm to the touch. Gently fold in mini colored marshmallows until evenly coated.
- Set and Serve: Spread the mixture evenly into the prepared pan, pressing lightly. Refrigerate for at least 2 hours, or until firm. Lift out using parchment paper and cut into squares.
Notes
- For extra flavor, add 1/2 cup chopped walnuts or pecans.
- Let the mixture cool before adding marshmallows to maintain the confetti effect.
