Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Mushroom Sauce:

  • 2 tablespoons butter
  • 8 oz cremini or white mushrooms (sliced)
  • 3 cloves garlic (minced)
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • Chopped parsley (for garnish)

Instructions

  1. Season the chicken: Season the chicken breasts with salt and pepper.
  2. Sear the chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken and sear for 4–5 minutes per side, or until golden brown and cooked through. Transfer to a plate and cover loosely with foil.
  3. Prepare the sauce: In the same skillet, reduce heat to medium and melt the butter. Add the sliced mushrooms and sauté for 5–6 minutes until browned and tender. Stir in the garlic and cook for 30 seconds. Pour in the chicken broth and stir, scraping up any browned bits. Let simmer for 2–3 minutes.
  4. Finish the sauce: Stir in the heavy cream, Parmesan cheese, and thyme. Simmer for another 2–3 minutes, until the sauce thickens slightly. Return the chicken to the skillet and spoon the sauce over the top. Cook for another 2 minutes to reheat the chicken. Garnish with chopped parsley before serving.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • Serve over mashed potatoes, rice, or pasta to soak up the creamy sauce.
  • Bone-in chicken thighs also work well in this dish with adjusted cook time.
