Ingredients
Chicken:
4 boneless skinless chicken breasts
Vegetables:
2 tablespoons olive oil, 8 ounces cremini or white mushrooms sliced, 3 cups fresh spinach, 3 cloves garlic minced
Sauce:
1/2 cup chicken broth, 1 package (5.2 oz) Boursin cheese or garlic herb cream cheese, 1/2 cup heavy cream, 1/2 teaspoon salt, 1/4 teaspoon black pepper
Cheese Topping:
1 cup shredded mozzarella cheese, 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F: Season chicken breasts with salt and pepper.
- Sear Chicken: Heat olive oil in a large oven-safe skillet. Sear chicken for 3–4 minutes per side. Remove and set aside.
- Cook Vegetables: In the same skillet, cook mushrooms until softened. Add garlic, then spinach until wilted.
- Make Sauce: Pour in chicken broth, stir in Boursin cheese and heavy cream until smooth.
- Combine Ingredients: Return chicken to skillet, top with sauce and vegetables, sprinkle with cheeses.
- Bake: Transfer skillet to oven and bake for 20–25 minutes until chicken is cooked through.
Notes
- You can substitute Boursin with plain cream cheese and 1 teaspoon Italian seasoning.
- Serve with cauliflower rice or zucchini noodles for a complete low-carb meal.
