  • 2 tablespoons brown sugar
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 1 teaspoon sesame oil

For the Stir Fry:

  • 1 red bell pepper (chopped)
  • 1/2 cup green onions (sliced)
  • 3/4 cup roasted cashews
  • sesame seeds and extra green onions for garnish

Instructions

  1. For the Chicken: In a medium bowl, toss chicken pieces with cornstarch, salt, and pepper until evenly coated.
  2. Fry the Chicken: Heat vegetable oil in a skillet, fry chicken until golden and cooked through. Set aside.
  3. Make the Sauce: Whisk together soy sauce, hoisin sauce, rice vinegar, chili paste, brown sugar, garlic, ginger, and sesame oil.
  4. Stir Fry: Cook bell pepper, add chicken back to skillet, pour sauce, add green onions and cashews. Cook until sauce thickens.
  5. Serve: Serve hot over rice, garnish with sesame seeds and green onions.
