Filling and Topping:

  • 4 oz block cheddar or mozzarella cheese (cut into small cubes)
  • 1/4 cup baking soda
  • 5 cups water (for boiling)
  • 1 egg (beaten, for egg wash)

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy. Stir in salt, olive oil, and 2 1/2 cups flour. Mix until a soft dough forms, adding more flour as needed.
  2. Knead and Rise: Knead the dough on a floured surface for 5–7 minutes until smooth and elastic. Let rise for 1 hour or until doubled.
  3. Shape the Pretzels: Divide dough, flatten, add cheese cubes, roll, and shape into pretzels or ropes.
  4. Boil and Bake: Boil pretzels, brush with egg wash, sprinkle salt, and bake at 425°F for 12–15 minutes.
  5. Serve: Cool slightly and enjoy warm with mustard or dipping sauce.
