Soup:

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (diced)
  • 2 celery stalks (diced)
  • 1 1/2 pounds Yukon Gold or Russet potatoes (peeled and diced)
  • 1 teaspoon Cajun seasoning (or more to taste)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon thyme
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 1/2 cup shredded cheddar cheese (optional)

Garnish:

  • Chopped green onions
  • Cooked crumbled bacon

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Add onion, garlic, bell pepper, and celery. Sauté for 5–7 minutes until softened.
  2. Stir in potatoes, Cajun seasoning, smoked paprika, salt, pepper, and thyme. Cook for 1–2 minutes to coat the vegetables in the spices.
  3. Pour in the broth and bring to a boil. Reduce heat to a simmer and cook uncovered for 15–20 minutes, or until the potatoes are fork-tender.
  4. Use a potato masher to mash some of the potatoes in the pot for a creamier texture, or blend part of the soup with an immersion blender.
  5. Stir in heavy cream and shredded cheese, if using. Simmer for 2–3 minutes until heated through and creamy.
  6. Serve hot, garnished with green onions, bacon, or extra cheese if desired.

Notes

  • For a spicier kick, add extra Cajun seasoning or a dash of hot sauce.
  • To make it vegetarian, use veggie broth and skip the bacon garnish.
