For the Cajun Chicken:

- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil (divided)
For the Bell Peppers:
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 medium onion (sliced)
- 3 cloves garlic (minced)
- ½ cup chicken broth
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cajun Chicken: In a large bowl, toss the chicken strips with Cajun seasoning until evenly coated. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4–5 minutes until golden brown and cooked through. Remove chicken from skillet and set aside.
- Bell Peppers: Add remaining olive oil to skillet. Stir in bell peppers and onion. Cook for 4–5 minutes until slightly softened. Add garlic and cook for 30 seconds. Pour in chicken broth and lemon juice, scraping up any browned bits. Return chicken to pan and cook for another 2–3 minutes until heated through. Season with salt and pepper. Garnish with parsley.

- For a creamier version, stir in ¼ cup heavy cream at the end of cooking.
