Tomato Mixture:

  • 4 ripe tomatoes, diced and seeds removed
  • 2 cloves garlic, minced (plus 1 whole clove for rubbing toast)
  • ¼ cup fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and black pepper to taste
  • Optional: shaved Parmesan or mozzarella for topping

Instructions

  1. Preheat oven: Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet, brush with olive oil, and bake for 8–10 minutes.
  2. Prepare tomato mixture: Combine tomatoes, minced garlic, basil, balsamic vinegar, olive oil, salt, and pepper in a bowl. Let sit for 10–15 minutes.
  3. Toast bread: Rub warm toasted bread with whole garlic clove.
  4. Assemble: Spoon tomato mixture onto each slice of bread. Top with cheese if desired and serve.
