Cream Cheese Topping:
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
Fruit Topping:
- 1 cup sliced strawberries
- 1/2 cup blueberries
- 1/2 cup kiwi slices
- 1/2 cup mandarin orange segments (drained if canned)
- 1/4 cup seedless grapes, halved
Glaze (optional):
- 1/4 cup apricot jam
- 1 tablespoon water
Instructions
- Preheat oven to 350°F. Prepare brownie mix according to package directions. Spread batter evenly into a greased 12-inch pizza pan or round baking pan. Bake for 20–25 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs. Cool completely in the pan.
- In a medium bowl, beat cream cheese, sugar, and vanilla until smooth. Spread evenly over the cooled brownie base. Arrange fruit decoratively over the cream cheese layer. For optional glaze, heat apricot jam and water in a small saucepan until melted and smooth, then brush lightly over fruit for shine. Chill for 1 hour before slicing.
