- 1 large egg, lightly beaten
- 1 teaspoon kosher salt

For the Gravy:
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 ounces cremini mushrooms, sliced
- 1 tablespoon all-purpose flour
- 2 cups beef stock
- 1 teaspoon Worcestershire sauce (for gravy)
- 1 teaspoon fresh thyme leaves
- 1 tablespoon fresh parsley, chopped
Instructions
- Prepare the Patties: In a large bowl, mix ground beef, onion, garlic, Worcestershire sauce, Dijon mustard, breadcrumbs, egg, salt, and pepper. Shape into 4 oval patties.
- Cook the Patties: Brown the patties in olive oil over medium-high heat, about 4–5 minutes per side. Set aside.
- Make the Gravy: In the same skillet, cook mushrooms in butter until golden. Sprinkle flour, then whisk in beef stock, Worcestershire sauce, and thyme. Simmer until thickened.
- Finish Cooking: Return patties to the skillet, spoon gravy over them, and simmer for 10 minutes. Serve sprinkled with parsley.
