Instructions
- Preheat oven and prepare pans: Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans and line with parchment paper.
- Mix dry ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Combine wet ingredients: In another bowl, whisk together eggs, buttermilk, oil, coffee, vanilla, and blackberry puree until smooth.
- Blend wet and dry mixtures: Gradually add the wet mixture to the dry ingredients, stirring until fully combined.
- Bake: Divide batter between pans and bake for 30–35 minutes or until a toothpick comes out clean.
- Make buttercream: Beat butter until fluffy, then add powdered sugar, blackberry puree, vanilla, and salt. Mix until smooth.
- Assemble: Level cake tops if needed, spread buttercream between layers and over cake, and decorate as desired.
