Ingredients

Scale

For the cake:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened dark cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 1/2 cup brewed coffee (cooled)
  • 1 tablespoon vanilla extract
  • 1/2 cup blackberry puree (strained)

For the blackberry buttercream:

  • 1 cup unsalted butter (room temperature)
  • 33 1/2 cups powdered sugar
  • 1/4 cup blackberry puree
  • 1 teaspoon vanilla extract
  • pinch of salt
  • Optional toppings:

    • fresh blackberries
    • edible flowers
    • dark chocolate curls
    • black food coloring gel (optional for dramatic effect)

Instructions

  1. Preheat oven and prepare pans: Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans and line with parchment paper.
  2. Mix dry ingredients: In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Combine wet ingredients: In another bowl, whisk together eggs, buttermilk, oil, coffee, vanilla, and blackberry puree until smooth.
  4. Blend wet and dry mixtures: Gradually add the wet mixture to the dry ingredients, stirring until fully combined.
  5. Bake: Divide batter between pans and bake for 30–35 minutes or until a toothpick comes out clean.
  6. Make buttercream: Beat butter until fluffy, then add powdered sugar, blackberry puree, vanilla, and salt. Mix until smooth.
  7. Assemble: Level cake tops if needed, spread buttercream between layers and over cake, and decorate as desired.

Notes

  • For a more intense blackberry flavor, consider adding blackberry extract to the cake or frosting.
  • Blackberry puree can be made by blending and straining fresh or thawed frozen berries.
