Dried Chiles:

  • 4 dried guajillo chiles, stemmed and seeded
  • 2 dried ancho chiles, stemmed and seeded
  • 2 dried pasilla chiles, stemmed and seeded

Other Ingredients:

  • 1 tablespoon vegetable oil
  • 1 medium onion, quartered
  • 5 cloves garlic, peeled
  • 1 medium tomato, quartered
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon cinnamon
  • 6 cups beef broth
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste

Instructions

  1. Toasting the Chiles: In a dry skillet over medium heat, toast the dried chiles for 1–2 minutes until fragrant. Transfer to a bowl, cover with hot water, and soak for 15–20 minutes until softened.
  2. Sautéing Vegetables: Heat oil in the skillet and sauté onion, garlic, and tomato for 5–6 minutes until lightly browned.
  3. Blending the Ingredients: Drain soaked chiles and blend with sautéed vegetables, cumin, oregano, cloves, cinnamon, and 1 cup of beef broth until smooth.
  4. Preparing the Broth: Pour the blended mixture into a pot with the remaining beef broth. Add apple cider vinegar, salt, and pepper. Bring to a simmer and cook uncovered for 20–30 minutes, stirring occasionally.
  5. Straining the Broth: For a smoother texture, strain the broth before serving.
