Dried Chiles:
- 4 dried guajillo chiles, stemmed and seeded
- 2 dried ancho chiles, stemmed and seeded
- 2 dried pasilla chiles, stemmed and seeded
Other Ingredients:
- 1 tablespoon vegetable oil
- 1 medium onion, quartered
- 5 cloves garlic, peeled
- 1 medium tomato, quartered
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cloves
- 1/2 teaspoon cinnamon
- 6 cups beef broth
- 1 tablespoon apple cider vinegar
- Salt and pepper, to taste
Instructions
- Toasting the Chiles: In a dry skillet over medium heat, toast the dried chiles for 1–2 minutes until fragrant. Transfer to a bowl, cover with hot water, and soak for 15–20 minutes until softened.
- Sautéing Vegetables: Heat oil in the skillet and sauté onion, garlic, and tomato for 5–6 minutes until lightly browned.
- Blending the Ingredients: Drain soaked chiles and blend with sautéed vegetables, cumin, oregano, cloves, cinnamon, and 1 cup of beef broth until smooth.
- Preparing the Broth: Pour the blended mixture into a pot with the remaining beef broth. Add apple cider vinegar, salt, and pepper. Bring to a simmer and cook uncovered for 20–30 minutes, stirring occasionally.
- Straining the Broth: For a smoother texture, strain the broth before serving.
