Chicken Kabobs:

  • 1 ½ pounds boneless, skinless chicken breasts, cut into 1 ½-inch cubes

Pineapple and Veggies:

  • 1 fresh pineapple, peeled, cored, and cut into chunks
  • 1 red bell pepper, cut into 1 ½-inch pieces
  • 1 green bell pepper, cut into 1 ½-inch pieces
  • 1 red onion, cut into wedges

Marinade:

  • ¾ cup barbecue sauce, plus more for brushing
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

  • Wooden or metal skewers

Instructions

  1. Prepare Marinade: In a large bowl, combine barbecue sauce, olive oil, soy sauce, garlic powder, smoked paprika, salt, and black pepper. Add chicken, toss to coat, cover, and refrigerate for 30 minutes to 2 hours.
  2. Preheat Grill: Preheat grill to medium-high heat. Thread marinated chicken, pineapple, bell peppers, and onion onto skewers.
  3. Grill Kabobs: Grill kabobs for 10–15 minutes, turning and brushing with extra barbecue sauce, until chicken is cooked through and slightly charred.
  4. Rest and Serve: Remove from grill, let rest, and serve hot.

Notes

  • You can use canned pineapple if fresh is unavailable.
  • For a spicier version, add hot sauce to the marinade.
