Description

This BBQ Chicken Skewer Salad is a delicious and satisfying meal that combines juicy grilled chicken with a fresh salad mix, perfect for a light and flavorful dinner option.

Ingredients

Scale

For the Chicken Skewers:

  • 1 1/2 pounds boneless, skinless chicken breast, cut into 1 1/2-inch cubes
  • 1/2 cup barbecue sauce, plus extra for brushing
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Salad:

  • 8 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup corn kernels (fresh, canned, or grilled)
  • 1/2 cup shredded cheddar cheese
  • Ranch dressing or vinaigrette for serving

Instructions

  1. Preheat the Grill: Preheat grill or grill pan to medium-high heat.
  2. Prepare Chicken Skewers: Toss chicken cubes with barbecue sauce, olive oil, smoked paprika, garlic powder, salt, and pepper. Thread chicken onto skewers.
  3. Grill the Chicken: Grill skewers for 4–5 minutes per side, basting with extra barbecue sauce during the last 2 minutes, until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  4. Assemble the Salad: In a large bowl, arrange salad greens, cherry tomatoes, cucumber, red onion, corn, and cheddar cheese. Remove chicken from skewers and place on top of salad.
  5. Serve: Serve with ranch dressing or vinaigrette.

Notes

  • For added flavor, marinate chicken in barbecue sauce mixture for 30 minutes before grilling.
  • You can also swap cheddar for feta or pepper jack for a different flavor profile.
