Description

For the batter:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2/3 cup plain Greek yogurt
  • 2/3 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the syrup:

  • 1/3 cup honey
  • 2 tablespoons water
  • 1 teaspoon lemon juice

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and prepare muffin tin.
  2. Mix filling: Combine nuts, sugar, spices, and butter for the filling.
  3. Prepare batter: Mix dry ingredients, then wet ingredients, and combine.
  4. Fill muffin cups: Layer batter and filling in muffin cups.
  5. Bake: Bake for 18–22 minutes until done.
  6. Make syrup: Heat honey, water, and lemon juice for syrup.
  7. Glaze muffins: Brush warm syrup over warm muffins.
  8. Serve: Allow to cool slightly before serving.
