- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2/3 cup plain Greek yogurt
- 2/3 cup whole milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
For the syrup:
- 1/3 cup honey
- 2 tablespoons water
- 1 teaspoon lemon juice
Instructions
- Preheat oven: Preheat oven to 375°F (190°C) and prepare muffin tin.
- Mix filling: Combine nuts, sugar, spices, and butter for the filling.
- Prepare batter: Mix dry ingredients, then wet ingredients, and combine.
- Fill muffin cups: Layer batter and filling in muffin cups.
- Bake: Bake for 18–22 minutes until done.
- Make syrup: Heat honey, water, and lemon juice for syrup.
- Glaze muffins: Brush warm syrup over warm muffins.
- Serve: Allow to cool slightly before serving.
