Description

Potatoes:

  • 2 pounds baby potatoes (halved)

Garlic Butter Mixture:

  • 3 tablespoons unsalted butter (melted)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese (optional)
  • chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a large baking sheet with parchment paper or lightly grease it.
  2. Toss potatoes: In a large bowl, toss the halved baby potatoes with melted butter, olive oil, garlic, thyme, parsley, salt, and pepper until evenly coated.
  3. Bake: Spread the potatoes cut side down on the prepared baking sheet in a single layer. Bake for 30–35 minutes, flipping halfway through, until golden brown and fork-tender.
  4. Add Parmesan: If using Parmesan, sprinkle it on during the last 5 minutes of baking.
  5. Garnish and serve: Remove from the oven and garnish with fresh parsley before serving.

Notes

  • You can use Yukon Gold or red potatoes if baby potatoes aren’t available.
  • For extra crispiness, broil for the last 2–3 minutes of cooking.
