Spinach Mixture:

- 4 large eggs
- 1/2 cup heavy cream
- 1/2 cup shredded Gruyère or Swiss cheese

Instructions
- Preheat oven: Preheat the oven to 375°F.
- Sauté vegetables: In a skillet, heat olive oil, sauté onion and garlic until soft. Add spinach, cook until wilted. Season with salt, pepper, and nutmeg.
- Prepare ramekins: Divide spinach among ramekins. Crack an egg over each. Pour cream, sprinkle cheese.
- Bake: Bake for 12-15 minutes until the whites are set but yolks are slightly runny.
- Serve: Remove from oven and serve on toasted bread or English muffins.
Notes
