Broccoli Mixture:
- 2 cups fresh broccoli florets, finely chopped
- 1 cup shredded sharp cheddar cheese
- 1/2 cup breadcrumbs (plus more for coating)
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Nonstick cooking spray or olive oil for baking
Instructions
- Preheat the oven: Preheat the oven to 375°F and line a baking sheet with parchment paper. Lightly spray with cooking spray.
- Prepare the broccoli: Steam or boil the broccoli for 2–3 minutes until just tender. Drain well and chop finely.
- Mix ingredients: In a large bowl, combine broccoli, cheddar cheese, breadcrumbs, Parmesan, onion, garlic, eggs, salt, pepper, and red pepper flakes if using. Mix until well combined.
- Form balls: Scoop about 1 to 2 tablespoons of the mixture and form into balls. Roll each ball lightly in extra breadcrumbs.
- Bake: Place on the prepared baking sheet, spray the tops with cooking spray or drizzle with olive oil. Bake for 22–25 minutes, flipping halfway through, until golden and set.
- Serve: Serve warm with your favorite dipping sauce like ranch, marinara, or garlic aioli.
