Broccoli Mixture:

  • 2 cups fresh broccoli florets, finely chopped

  • 2 cloves garlic, minced
  • 2 large eggs

  • 1/4 teaspoon red pepper flakes (optional)
  • Nonstick cooking spray or olive oil for baking


Instructions

  1. Preheat the oven: Preheat the oven to 375°F and line a baking sheet with parchment paper. Lightly spray with cooking spray.
  2. Prepare the broccoli: Steam or boil the broccoli for 2–3 minutes until just tender. Drain well and chop finely.
  3. Mix ingredients: In a large bowl, combine broccoli, cheddar cheese, breadcrumbs, Parmesan, onion, garlic, eggs, salt, pepper, and red pepper flakes if using. Mix until well combined.
  4. Form balls: Scoop about 1 to 2 tablespoons of the mixture and form into balls. Roll each ball lightly in extra breadcrumbs.
  5. Bake: Place on the prepared baking sheet, spray the tops with cooking spray or drizzle with olive oil. Bake for 22–25 minutes, flipping halfway through, until golden and set.
